Easy Rhubarb Cake (Vegan)Ingredients 1 ½ cups plain (all-purpose) our 1 cup sugar 125 ml vegetable oil 1 teaspoon baking powder 0.5 teaspoon baking soda 1 tablespoon cinnamon or to taste 300-500 g rhubarb cleaned and sliced into small chunks 200 ml soya milk 1 teaspoon apple cider vinegar 1 teaspoon vanilla extract icing sugar to serve and to tasteInstrucons1. Clean rhubarb and cut each stalk into small chunks.2. Prepare your cake %n by greasing it slightly and lining the bo&om with greaseproof paper. 3. Preheat the oven to 180C(Fan)/350F/Gas Mark 4.4. In a large bowl whisk together our, sugar, baking powder and baking soda and set aside.5. In a medium jug whisk together soya milk, apple cider vinegar, vanilla extract and oil un%l well combined. 6. Next, pour the liquid mixture into the bowl with dry ingredients and mix it in gently un%l incorporated. Don’t overmix!7. Pour cake ba&er into prepared %n, spread rhubarb chunks evenly over the top pressing them down gently and sprinkle generously with ground cinnamon. 8. Bake for approximately 45-50 minutes or un%l the toothpick inserted in the centre of the cake comes out clean.9. Let the cake cool and sprinkle it generously with icing sugar. 10. Serve and enjoy!
